Kneadlessly Simple Easy Oat Bread:

5 1/2 cups unbleached all-pourpose white flour or bread flour, plus more as needed
1 1/4 cups old fashioned or quick oats (not instant oatmeal)
3 tablesppons granulated sugar
2 3/4 teaspoons salt
1 teaspoon Fleischmann's RapidRise or Bread Machine yeast (I used regular Active Dry and it seemed fine)
1/4 cup honey or mild molasses
1/4 cup vegetable oil
2 1/4 cups ice-cold water, plus more as needed

1. FIRST RISE: In a very large bowl, thoroughly mix flour, 1 cup oats, suga, salt and yeast. Stir together honey, oil and ice water in a separate bowl; add to dry ingredients and stir vigorously. If too dry, stir in just enough additional water to mix together; dough should be slightly stiff. If dough is very soft, stir in more flour to stiffen. Brush top of dough with oil (I used spray vegetable oil--works like a charm). Cover bowl with plastic wrap. For best flavor or convenience, refrigerate dough 3 to 10 hours; this is optional. Then let rise in a cool room 12 to 18 hours.

2. SECOND RISE: vigorously stir dough. If necessary, stir in enough additional flour to yield a hard-to-stir (elastic) consistency. Generously grease two 8 1/2 X 4 1/2 inch bread pans, making sure sides are greased the whole way to the top. Sprinkle 1 tablespoon of oats in the bottom of each pan, shaking pan to distribute them evenly. Using oiled kitchen shears or a serrated knife, divide dough in half. Put half in each bread pan; with oiled fingers, smooth top of dough. Sprinkle 1 tablespoon of oats over the top of each loaf, pressing it lightly to imbed it in the dough. Cover pans with greased plastic wrap.

3. LET RISE USING ANY OF THESE METHODS: For a 2 to 3 hour REGULAR RISE, let stand at wram room temperature; for a 45-minute to 2 hour FASTER RISE, put in a turned-off microwave with 1 cup boiling water; for SLOW RISE, refrigerate up to 24 hours, then put in a warm room. As dough nears plastic wrap, remove it; continue until dough is 1/2 inch above pan rim.

4. BAKING: Bake in a preheated 375 degree oven for 50-60 minutes, until tops are well browned. Cover with foil, bake 10-15 minutes more, until skewer inserted in center comes out with only a few particles on tip, or until center registers between 208 and 210 degrees. Bake five more minutes to be sure it's done. Cool 15 minutes in pan. Turn loaves onto rack to finish cooling.

5. SERVING/STORING: Best served at room temperature or toasted. Store airtight at room temperature three days; may be frozen, airtight, for up to two months.

The only faintly tricky thing with this recipe is figuring out when you want to eat the bread, then choosing the timing/rise methods to get you to that place. Very good--dense, moist brown loaf with a faint molasses flavor. I anticipate that it's going to make some kick-ass PB & J.

Meet me at Ruth’s Chris Steak House, 7pm.

All Emmett knew was that it had the best Zagat ratings in town, and that he should dress a little less…Emmett-like. He didn’t usually do blind dates, but something about this sounded…familiar.

He arrived and was escorted to a table in the private dining section. He was thankful for this, as the restaurant was quite busy. The table boasted a tasteful centerpiece, three white taper candles burning brightly.

“Thanks for meeting me,” a voice came from behind him. Emmett turned, surprised.

“Drew.”

“Wanna help me celebrate my twenty-first?”

I am doing research for a story in a fandom I can’t announce until after the reveal, and have found myself reading actual academic literary criticism for the first time in a long time. Oh, fandom, you do a much better job at meta! I was really struck by how reaching and pompous some of this is, and thought about all the insightful, meaningful meta I read regularly in fandom. I wish I could point you to some examples of the ridiculous lit crit I’ve been reading, but – can’t. I’ll leave you to imagine it.Read more... )

Notes: thank you to [info]sidhe_woman who beta'd this, and who had to do double-hard duty to fix all my odd uses of the present tense, if any present tense remains (or any other mistakes) that's all my fault
This story came about as a reaction to hearing the song (of the same name as the title) on the radio and thinking it just *had* to have something to do with the Highlander universe, and also because I'd always wanted to write a story with Detective Bennett in it. I had to give the poor guy a first name, as he didn't even seem to get one during the series. If he did have a first name, please let me know. And thirdly, and most importantly, because I could not resist throwing in the "I don't know what you are...." line that seemed so popular in Season 1. It cracks me up something fierce; it just *had* to get used in a story.

Gus loved the holidays. First, there was Chanukah. Mama would light the menorah and pray in Hebrew. He could recite the first prayer, and Mama and Mommy smiled when he got it right.

Uncle Michael and Uncle Ben were here this year, but Hunter couldn’t come. Something called ‘finals’. They didn’t sound like fun. They bought gifts for him and JR, and even Gramma Debbie had sent something. Lemon bars. They didn’t have those in Canada.

The best part, though, was when he and Uncle Michael watched Adam Sandler sing The Chanukah Song.

All you have to do is comment to this post and provide me with a photo of your desired "hat-ee" to use as a base for the icon--a head and shoulders shot is about the best, but I'm open to others if you have a real favorite. Here I am with yet another White Collar rec. That kink meme at collarkink on LJ has produced a lot of excellent ficlets, and this is another one. The requestor asked for h/c where Peter gets hurt during a chase and Neal worries and mother-hens. In this Neal goes farther than mother-hen, imo, but it's emotionally honest and beautifully written. Another author I hope claims her story so I can read more of her stuff.

Subject:Thoughts on frozen water falling from the sky and accumulating on the ground

Honestly, why do people live where it snows?

Do not misunderstand. I like snow. I like it very much when I'm sitting by the fire at a ski lodge, sipping hot cocoa and reading a good book and waiting for room service to bring my dinner. I like it when it's drifting down romantically, settling softly all along the needles of the evergreens, and making the holiday lights on charming cottages sparkle. I like it when I'm out in it playing with my nephews, throwing snow balls and making snow men.

I do not like it when it makes cars slip all over roads and closes down airports and prevents one from doing what one is supposed to be doing, such as coming home or working.

The bottom line is this, I'm back from a trip, the journey home massively sucked, and I'm so tired I cannot move.

Did you miss me? I missed you!
